Ever since the time of Descartes, we have had the dualistic worldview in which the mental and physical realms are entirely separate, with the mental only able to influence the physical through our control over our own bodies. The whole “unthinking matter reacts to intent” is usually relegated to literal Divine Intervention.

I think that the paradigm here is that Immortals are not actually beings of Matter, and are instead “made of” magic. Literally every action that they perform upon the physical world is not a matter-upon-matter interaction, but rather a magic-upon-matter interaction.

I don't think that's accurate, specifically because of the ability to mate with humans and carry an elf to term, Adrian being a case in point. 

They seem to manifest physically, but have a lot of control over how they manifest.

This being EGS, got to wonder if the gender/sex is set.  Could Jerry have been Jeraldine, for example?  I mean either long term or for a party or something.

For temporary transformations, it seems that a sufficiently experienced Immortal can take the appearance of anything which can be reasonably called “animate”—see how inhuman Pandora’s “chaos cloud” form was. An Immortal’s “core” form is apparently based upon their subconscious self-image, so if an Immortal who previously thought of themselves as being male were to start thinking of themselves as being female at heart, then their core form would presumably change to mirror this.

Pandora marked Tedd with such a transformation; I'm guessing if they can mark it, they can do it.
