Two possibilities spring to mind:

First, she could be appalled at Pandora’s own callousness at creating Ellen just to be a gimmick in her toying with Magus—a person who wasn’t meant even to be a toy, just an accessory to one.

Second, she may have sensed the “dragon power” that is attached to Ellen. Now, whence came this power? Could it be that the “dragon scale” used in the Dewitchery Diamond was from Ragnarok? And if so, does that mean that Voltaire may have some previously-unrevealed influence over Ellen?

I had completely forgotten about Ellen and Dragon Power. (which sounds like a D&D political movement).  I assumed that Hope was freaking out due to the “last year” remark of Mr. Dunkel esq.

Hmmmm.  Edward said “no undead”, but that was in the context of zombies and vampires.  Ghost might be possible.
