While they are sparing the current group of cultists, they are securing them so they can't attack them later.  Of course if the rules that they were using is 5e, the one taken out by magic is dead as you can't do non-lethal damage with any thing but melee attacks.

That sounds  . . . lame? Like, did they put any thought into that whatsoever? 'Sleep'? 'Fear'?

Got it. You can't take the target past zero with magic and expect to subdue them with just magic. You could still have them bleeding out, but you'd have to get physical at that point.

I am picturing the bard pulling an accordion out of her backpack and playing specifically elven sea shanties, substitute 'wine' for 'rum'. The thief continues to look confused. It's a good look for her. She succeeds at the knots, but only because of a dice roll, she does not actually know any.

In 3.x D&D "Rope Use" was a skill.  Right now there isn't a skill that tells you how well you tied someone up.   If some one tied some one up in my 5e game, I would run it as a grapple with the tying character having advantage on their strength check.

"Advantage" has a specific meaning in D&D 5e.  It means you roll 2 d20 and take the highest one.  You can't stack advantage to roll more than 2 dice.  Also Disadvantage means you roll 2 d20 and take the lowest.  Having both disadvantage and advantage at the same times just cancels out each other.

This could easily get silly.

"You need a grapple roll to tie them up."

"They are unconscious!"

"The rules say you need a grapple roll."

Actually there aren't rules to tie up any body.  I would, as a DM, apply the closest thing to them, that being the grapple mechanic.
